“Food is of the land, we are the food we eat, therefore we are of the land.” That eloquent phrase was part of an excellent presentation made by University of Guelph professor Rene Van Acker at a Food & Water First event earlier this spring. “In the Hills” magazine has published his speech in its entirety and it’s a must-read. Professor Van Acker is a crop specialist and advocate for the protection of Ontario’s prime farmland. As he points out, “defending it is not only noble, but fundamentally necessary.”
